Pinterest Fail and Peaches-N-Milk

One of my favorite baked chicken recipes is from the Hellmann's website...


It's really simple too.  Simply mix:
1/2 cup Hellmann's Mayonnaise 
1/4 cup parmesan cheese
*Spread this mixture over 4 chicken breasts and sprinkle w/Italian breadcrumbs and bake @ 425 for 20 minutes.

Recently I pinned a recipe that was very similar to this one except it replaces the mayo w/greek yogurt.  I thought I would give it a try tonight and it was a huge flop.  It tasted way too salty to me, almost like feta cheese in a weird way.  I love me some feta cheese, but not spread over chicken and baked :)  Next time I'm going to try mixing the greek yogurt w/ranch dressing mix and sprinkling some parmesan cheese and panko on top - that sounds yummy!

It was a good thing I made some really good sides to go w/that chicken b/c that's all I could eat.  I broiled some parmesan tomatoes and sauteed zucchini and squash - yum!


I was telling my mom that I bought some really good peaches at the produce stand and she told me that peaches are really good w/milk poured on them - kind of like peaches-n-cream.  I have never heard of anyone doing that before, but I thought I would try some for dessert.  I didn't know something so simple could be so tasty!  Just cut up a few peaches and pour some milk on top and enjoy!  Next time I might sprinkle some splenda on top.  Has anyone else ever heard of doing this??

L, M, N, O, Pete


It’s no secret that my child loves her some Mickey Mouse Clubhouse.  We try to limit the amount of “PB” (aka TV) we let her watch, but every night after bath time we let her watch one of her shows in order to calm down and prepare for bed time.  I let her choose between The Fresh Beat Band (Beat Beats), Blue’s Clues (Blue) and Mickey Mouse Clubhouse (Moushe).

When Mickey comes on she starts yelling out the “role call” before it even starts – Nonald, Saisy, Googoo, Pluwo, Ninnie and Moushe.  However, we can’t forget Pete.  As soon as she sees him she gets so excited and starts saying “Pete, Pete” over and over again until you acknowledge her.  I'm not exactly sure what her fascination is with him, but she sure does love him! 

We have really been trying to practice our ABC's as much as possible lately.  She's catching on, but not quite there yet.  We start off singing them and then we say every letter and have her repeat after us.  She mimics all of the letters we say, until we get to "P" - which she then screams out "Pete!".  It's too cute and just something I had share :)

On a completely different subject, I was dragging this morning and stopped by Mickey D's to grab a coffee.  I decided to try their non-fat sugar free iced vanilla latte and it was SO good!  I think i'm addicted already!  Plus it's so much cheaper than Starbucks, so it's a win-win!

Back To The Real World

It was so hard to get up this morning after having such a great three day weekend.  I managed to get Addi and I ready and out the door on time (this is very unusual).  

After a few errands this afternoon, I met Addi and Brad at Jim-N-Nicks for dinner - yum!  I'm having trouble getting Addi to eat dinner.  She eats great at school, but at home, not-so-much.  I thought she would love the chicken fingers and mashed potatoes, but she just pushed them away.  Brad's mom gave me a gift card to Yogurt Mountain, so we decided to have dessert.  Addi had no problems eating her froyo...


On the way home, I stopped at the produce stand to see if they got any seedless watermelons in and they did - my favorite!  I have a huge thing of it getting nice and cold in the fridge for tomorrow.


Then it was time for a bath to remove all of the chocolate yogurt from Addi's face and hair.  Her Honey bought her these colors for the bath tub and she LOVES to "colo" during bath time.  We also use this time to practice our ABC's and counting.


I'm now just enjoying sitting here watching the RHOC.  I'm kind of obsessed with ALL of the housewives, but I have to say that Orange County is one of my favs.  I'm loving Heather this season - i'm not sure what it is about her, but I just want to be friends with her in real life - haha!

Memorial Day Weekend

It's REALLY hard being a full-time working mom, so I try to cherish every moment I get to spend w/my family.  Three day weekends make me very happy! Friday night, we drove to Gadsden to eat at Top O' The River.  We got a late start and ended up eating a lot later than Addi is used to and she was super tired.  She ended up laying down in the booth - bless her!


Saturday was full of birthday parties!  Our friend's little boy was turning 5 and had a swimming party.  I had lathered Addi w/sunscreen before we went and she ended up rubbing it all in her eye.  After about 30 minutes she was back to her normal self, but still didn't want to swim.  Instead, she ate approximately 5 plates of cheese balls. haha!  I didn't take any pictures so I ended up stealing these off Amber's FB page.

That night we went to celebrate Amber turning 30!  She had a Roarin' 20's party.  It was really cute and everyone was all dressed up in their 20's attire.  Brad and I were party poopers and didn't dress up, but we still had a great time!

This little booger spent the night with my mom and conned her into staying up watching "Blue" until 10:00.  Needless to say, she took a fantastic nap Sunday!

Brad and I were both off for Memorial Day and he spent the day playing golf with some friends.  Mom and I took Addi to the park bright and early (so we wouldn't die from a heat stroke!).  She loves to slide and play with the other kids! 


Last night, Brad smoked a pork tenderloin and I fried up some squash from our garden...I also roasted some asparagus for myself since neither Brad or Addi will eat it.  It was so good!  We have a little produce stand near our house and I went to buy a watermelon, but they were out of the seedless ones, so I bought some peaches instead.  I used them to make Brad's favorite Peach Cobbler Muffins.  

We had a fantastic weekend and I hope y'all did too!

Let's Catch Up


I have been meaning to blog more lately, but I just can’t find the time.  I’m going to make more of an effort from now on – promise!  Here are a few things that have happened over the last couple of weeks (WARNING – this might be long and random):

·         We finally sold our rental house.   It was damaged in a tornado this past January and we took this opportunity to get rid of it.  This was our first home and we have many memories from living there, but the truth is that I have never liked that house and I’m glad we sold it. 

·         I have been on the search for a new facial cleanser and I’ve finally found the perfect one for me and I’m obsessed – Origins Checks and Balances.  Love.


·         Brad surprised me with an iPad for Mother’s Day.  I can’t picture myself ever using a laptop again – I love it!  However, Addi thinks it’s her new toy.  I have downloaded several free apps that she can play with and she wants to “pay” all the time.  I bought this cool case for when she uses it…it has handles and I don’t have to really worry about her messing it up if she drops it.

·         I surprised Brad with an iPad for our anniversary.  We are both only children and therefore we don’t do very well with sharing.  He needed his own – haha.

·         Wednesday, May 16th, was the one year anniversary of my dad’s death. I’m not gonna lie, it’s been a tough year, but we are still celebrating that he is in a much better place.

·         Brad and I celebrated our four year anniversary.  I thank God every day for putting him in my life and putting up with me. :)

·         I have discovered Overnight Oats.  This recipe has probably been around for a while, but I’m just now trying it.  Usually, in the mornings I’m rushing around like a mad person trying to find something to wear, ironing clothes and finding Addi’s socks (where do they all go??).  I never have time to cook breakfast, so I usually end up going to a drive thru or just not eating at all.  The great thing about this recipe is that you make it all the night before and it’s actually good for you!  I added some cocoa powder and splenda to mine to make it like chocolate oatmeal – yum! 

·         I’m always making fun of teasing Brad about being cheap.  He would love to save every dime we make, but we all know that isn’t exactly possible.  But, we have worked very hard to build up our savings to buy me a new car.  Now that we have bought it, it’s time to start saving again for something else!  Here is what he bought me (LOVE IT!)…

·         We have booked a trip to VEGAS with some friends.  I can hardly contain myself I’m so excited!  If any of y’all have ever been please let me know the must see places and things to do.  I have already done a little research and my Vegas "to-do" list keeps getting longer!

·         Last night we celebrated what would have been my dad’s 62nd birthday.  We met my mom at a local Chinese restaurant and then had Dreamcakes for dessert.  I have a leftover cupcake for lunch today and I can’t wait to eat it – they are the best!!!

Well, I think that just about covers our life from the past couple of weeks!  I hope everyone has a SAFE and FUN Memorial Day weekend.  Ours will be filled with birthday parties and family time!

Hand Soap


Do y'all have a smell that brings back certain memories?  I have three in particular:

1.   The smell of Gardenias makes me want to go swimming.  It reminds me of summertime at my Mammaw's house.  She must have had them planted around the pool.
2.   The smell of something that has been burned.  When I was in the second grade, my mom was frying okra for dinner and I may or may not have left the back fence open for the dogs to get out.  She left the stove to drive around the neighborhood to find the dogs...this resulted in a kitchen fire.  I will never forget that smell.
3. Last, but certainly not least, is the smell of hand soap that is used at St. Vincent's Hospital.  I hate the smell of that stuff.  Here's why:


Most of you know about Addi's stay in the NICU after she was born (you can read about it HERE if you don't).  Before you are allowed into the NICU you have to go to a "washing station" and wash your hands.  We did this roughly five times a day for 30 days.  The first time I went back to that hospital after she was released and had to wash my hands, I was taken back to a place that I never wanted to go to again.  It's a place and time of heartache and sickness.  Images flashed in my head of Addi being hooked up the ventilator and wires everywhere.  It was an awful feeling.

Today, I went up to the hospital to pick up a prayer request for Footprint's Ministry and I was hit with that smell once again as I washed my hands.  All of the memories came flooding back, but I started to think about the precious, healthy two year old we have now.  No more sickness.  No more pain.  No wires.  No ventilators.  No beeping machines.  No medication.


Today, I was thankful for the smell of that stupid hand soap because I needed a reminder that God is faithful and full of grace and mercy (that I definitely do NOT deserve).  He is our ultimate Healer who makes all things new!

I thought I would give a little update on my Addi girl.  She is such a mess and her little big personality shines through more and more each day.  She is so funny.  It amazes me how much she has learned over the past few months.  She is talking more and more and we are still working on our two word combos…slowly but surely we are getting there.  She is still seeing a speech pathologist twice a month.  Hearing all of the other kids talk in her class has really helped her with her speech.  She LOVES singing all of the little songs they have learned as well and of course doing all of the hand motions.

We are still at the stage where “mine” and “no” are her favorite words.  We bought her several toys to play with in the pool while we were at the beach and every time she thought another child was going to get one of her toys she started yelling “mine, mine”.  Even though she was very protective of her toys, she still played well with the other kids – I guess that’s another benefit of going to daycare.  I had two mothers ask me if she went to preschool/daycare because she was so interactive with the other children and just played really well.
 
I don’t know her measurements b/c we haven’t been to the doctor since her 24 month check-up, but just comparing her to others her age, she seems to be a lot taller.  I’m guessing she weighs about 38 lbs.  She is in a size 6 diaper and wears 2t/3t clothing. 

We haven’t gotten to potty training yet, but I know that’s our next big adventure – joy!  I’ve tried sitting her on the potty when I thought she was about to “go”, but she just got really stiff legged and refused to sit.  I know she’s not ready yet, so I haven’t pushed it.  When she moves up a class at school they will be really working with them and will enforce using the potty.

She has done FANTASTIC without her pappy!  After about two days of trying to suck on the pappy I cut, she just gave up and was over it.  She takes teddy to school every day and sleeps with him at naptime and that seems to have replaced pappy.  She sleeps about 1 ½ - 2 hours in the afternoon and goes to bed around 8:00.  I’m planning on buying a toddler bed soon.  Honey and dad have offered her a full size bed, but we are going to transition with a toddler bed at first.  I’m a little hesitant on getting a bed right now b/c she sleeps so well in her crib and I hate to ruin a good thing.  She’s never tried to climb out of it either – as soon as we put her down at night she just lays down and goes to sleep. 

She is truly the joy of our lives and we wouldn’t trade her for anything.  We love her more and more every day.

Beach 2012

Thursday night Brad, Addi and I packed up and headed to Gulf Shores for the weekend.  We didn't get to our condo until after midnight, so we went straight to bed.  Bright and early Friday, we packed up our little red wagon and went towards the beach.  We get there and Addi freaked out and wouldn't even let me put her feet in the sand.  Needless to say, we spent all weekend at the pool.  I love hanging out at the pool, so it was fine by me!  Brad, on the other hand, loves the ocean so he was kind of disappointed - but he will do anything to keep his little girl happy!

Side note - I bought the CUTEST watermelon hat to match her swimsuit, but of course she refused to wear it!

We took a break from the pool and walked down to Sea-N-Suds for lunch - yummy!  After lunch, we attempted to take a nap...it wasn't happening!  We went back down to the pool to spend the rest of the afternoon.  She ended up falling asleep right before we left for dinner...


Bless her little heart - she was exhausted.  We couldn't bring ourselves to wake her up, so we just let her sleep and went to dinner later.  Since school isn't out yet, the beach wasn't that crowded and we only had to wait 30 minutes to eat.  We went to The Original Oyster House and there are little shops to go to while you wait.  Here are some pics before dinner...



The next morning, we repeated everything from the day before (including not taking a nap!) except our friends who live in Gulf Shores came to hang out with us.  To say Addi loved them would be an understatement.  I've never seen her cackle so hard - she had a blast!  We went to LuLu's with them that night - seriously, there is nothing better than fresh seafood for dinner!

This was our first family vacation with just us three and no grandparents and we had a really good time! Maybe next trip she will actually enjoy the sand/ocean.  I'm dreading going back to work in the morning - ugh.
