Busy Weekend

We had a jam packed weekend filled with family time and hanging out with friends.  Our weekend ended w/Addi getting sick and having a fever.  At 3am this morning we were up watching Mickey trying to get sleepy.  I stayed home with her today and she seems to be feeling better.  Here are a few pictures from our weekend...

Menu Plan Monday

I have done a horrible job of planning my menu lately. We mostly went out to eat last week and I’m SO tired of fast food. I thought I would try to get back in the swing of things this week and get in the kitchen! Be sure to visit for Menu Plan Monday and link up along with me.

Ever since the weather started to get a little cooler at night, I have wanted to make chili. Tonight, I will make that happen! I thought I would share our most favorite chili recipe with you:

Mexene Chili
1 lb. ground beef
¾ c chopped onion
1 clove minced garlic
2 tbsp Mexene Chili Powder
1 tbsp flour
1 tsp salt
½ tsp cumin
½ tsp sugar
1 – 8 oz can tomato sauce
1 cup water

Directions: Brown ground beef with onion and garlic. Drain fat. Combine remaining ingredients with the ground beef and simmer for 30 minutes. Serve with cheese, sour cream and fritos – yum! The hubs really likes this chili, so I normally double the recipe.

Monday – Chili and grilled cheese sandwiches

Tuesday – Swiss Chicken - I use white wine instead of the chicken stock

Wednesday – Taco Cornbread Bake - This stuff is SO good!

Thursday – Leftovers

Friday – Out of town

Saturday – Out of town

Sunday – Peanut Butter and Jelly Sandwiches

I have recently been on a peanut butter and jelly kick. I forgot how much I like them! Haha. I will probably eat one everyday for lunch this week  :)

First Beach Trip

This past weekend we took a MUCH needed beach trip.  We left Thursday and got back this afternoon.  It was wonderful not having to worry about anything and basically just take a break from life for a few days.  I'm dreading going to work in the AM.

Apparently mid September is the best time to head to the coast.  There weren't that many people on the beach and the restaurants weren't crowded at all.  The weather was perfect!  This was Addi's first real vacation and I was worried if she was going to like the sand and water or not.  She LOVED it!  The pool was probably her favorite.  Thank goodness they had an indoor pool, so I didn't have to worry about lathering her up w/sunscreen as much. 

She's definitely not scared of the water (which makes for a very nervous mommy).  We have to keep a really close eye on her or she will just dive right in.  Saturday afternoon, we were standing with our feet in the ocean and people started screaming "shark!".  We looked and there were at least three sharks in MAYBE knee deep water.  It definitely gave us a scare.  I'm not much of an ocean person anyways - I would much rather be at the pool, but this definitely made me want to never get in the ocean again. 

 One of the best purchases we made before we left for the beach was a folding red wagon similar to the one pictured above.  We were going to buy just a Radio Flyer wagon, but this one takes up way less space when traveling and the wheels are much better for rolling in the sand.  We mainly bought it to lug all of our beach necessities to and from the condo, but Addi also fit perfectly in it!

I wish I would have taken more pictures, but sometimes I think it's best to just enjoy the moment.  A lot of times I'm trying so hard to get good pictures of her that I can't take in everything that's happening.  I hope everyone else had a great weekend!

Trusting in Him

Do any of y'all ever feel like quitting your jobs, packing up your family and moving to some exotic island somewhere?  Some place where you don't have to worry about anything. I have felt like that this past year and a half, but especially these past few months.  Not exactly sure what's wrong with me, but I've been super emotional lately.  I won't go into details, but I have been praying for something specific these past few months and nothing has happened yet.  I know good and well I need to be patient, not worry and just rely on God.  I know deep down in my heart that He is faithful and just.  I also realize that He is making me wait on His timing and teaching me MANY lessons during this waiting period.  His plans are ALWAYS better than mine.  It's tough when you want something to happen so badly, but instead, everything just keeps going wrong. The devil is trying to weasel his way in and put doubts in my mind.  I'm trying to focus on the following two verses:

"Now to him who is able to do immeasurably more than all we ask or imagine, according to his power that is at work within us" Ephesians 3:20

"Delight yourself in the Lord and He will give you the desires of your heart" Psalm 37:4

So, I'm going to continue to trust in Him and I look forward to seeing what He has planned for my life!

The Zoo and Boo Boo's

Saturday, my mom and I took Addi to the zoo for the first time.  Mom had to go to a funeral that morning, so we decided to wait until that afternoon.  I thought Addi would be ok going with out a nap - BIG mistake.  We started out with the Children's zoo.  Addi was not at all interested in petting goats or looking at chickens up close.  She wouldn't sit in the stroller without screaming and when I let her walk beside us, she refused to hold my hand.  The only two animals that even remotely caught her attention were the turtles and the giraffes.  I definitely learned my lesson and she will be taking a nap before our next visit (next year)!!

After our "memorable" zoo trip, we went to meet up with Brad at some friends' house to watch the game.  Again, Addi being Miss Independent, ran from me and fell and scraped up her nose on the concrete.  She was already banged up from a previous fall at daycare the day before.  She is so clumsy!! I think i'm going to buy her a helmet and some knee and elbow pads!

18 Months

 Sunday, my baby girl turned 18 months old.  She is such a mess and SO independent.  We went to her 18 month check up this afternoon and she acted like such a big girl.  She is 30 lbs and 35 in tall - 99th percentile in both height and weight.  She had to get a flu shot and a Hep C shot which caused a little bit of a meltdown.

She has learned the Itsy Bitsy Spider at daycare and she is so cute doing the motions - it cracks me up.  Also, I'm not exactly sure where she gets her dancing skills from but they are so funny! I will try to get a good video of her dancing and post it.

Monday, my friend Sadie and I took Addi to a little place where they have blow up slides and several things kids can ride/play on.  She LOVED it!  Mommy, on the other hand, is a getting too old to be climbing and running around - but it was fun!

Football and Family Time

My Addi girl is 18 months old today!  We go for her 18 month doctor's appointment this week, so I will do an official update after our visit.

Alabama football started up again this weekend and for the rest of the season, our Saturdays will be spent with a household full of people or hanging out at friend's houses.  I personally don't care as much for football as I do the food and company!  Doesn't she look cute in her little Alabama cheerleader uniform??
Today, we spent some much needed family time together.  We shopped, ate lunch w/my mom, and met our future renters!!  They seem like really nice people and I hope it works out.

I just have to document this next idea my hubby had.  It's totally out of his character to suggest something like this and I want to remember it - haha.  Today, he suggested that we hire someone to clean our house.  Umm, heck yeah we should!  I HATE cleaning, like with a passion.  Doing laundry keeps me busy enough.  I would be happy if that's all I had to do and I could get someone to sweep, mop, vacuum and dust.  I still can't believe he suggested this and i'm definitely holding him to it.  haha!
