Crockpotalooza!

I thought I would join in Kelly’s Crockpotalooza! Head on over and link up with her.

I LOVE my crockpot. It’s so nice to know dinner is done when I get home from work and I’m able to spend some extra time with my family!

I had a major crockpot FAIL yesterday. I threw some chicken breasts in and covered with bbq sauce. My result was dry, half-burnt chicken – yuck!

Here are a few of my go to recipes that never fail me –

Salsa Chicken
3-4 chicken breasts
1 jar Picante Sauce

Simply put the chicken in the crockpot and cover w/the Picante Sauce. Cook 6-8 hours on low. I usually serve this over rice and top with cheese.

Potato Soup
1 – 30oz bag of frozen shredded hash browns
3 – 14oz cans of chicken broth
1 can cream of chicken soup
¼ tsp ground pepper
1 pckg cream cheese

Combine all ingredients, EXCEPT the cream cheese in a crockpot and cook on low 6-8 hours. About an hour before serving, add cream cheese and heat until completely melted. Serve with cheese, sour cream, etc.

I found this recipe on Pinterest and it is the best recipe for potato soup I have found – plus it’s super easy!

I had planned on cooking this Crockpot Lemon Chicken today, but I was running late this morning.  Instead, we are having oven baked chicken and potato pancakes (made w/leftover mashed potatoes) - did anyone else's mom make these when they were younger?  They are one of my favs!

Wonderful Weekend...

The Alston household had a GREAT weekend! I was able to spend some quality time with my momma which is always nice. Friday night we went to a consignment sale. I always get so pumped about consignment sales and I imagine all these great deals that I’m going to find only to be disappointed with stained/worn out clothes. Ugh. I ended up finding a few things, but not as much as I had hoped. Afterwards, we went to dinner and a movie. We saw The Help. I haven’t read the book yet, but the movie was really good and I plan on reading the book soon!

Saturday morning my mom, Addi and I went to another consignment sale put on by some ladies in a local neighborhood. I found way more at this sale that I liked! It was much nicer stuff and in was in better shape.

My mom and I have been on the lookout for a riding toy for Addi. After the sale, we went to Target and Wal-Mart on a mission to find one. We ended up getting this one…
 We were trying to decide between two different ones and I know my mom chose this one because it’s what my dad would have bought her if he was here. This was definitely a “Pop” purchase. She LOVES it!

That night we went to Uncle Chad’s house to watch the race. Addi LOVES her Uncle Chad and spent most of the time sitting in his lap.

Sunday was church and CLG. We attempted to take Addi with us to our small group, but we had to leave early b/c she was just getting restless and wouldn’t be quiet (it was past her bedtime). Overall, she was in a great mood this weekend and was so well-behaved.

This week I will be busy getting clothes ready to put in a consignment sale and cleaning. We are having everyone over Saturday to watch football. The festivities will begin at 8 am. The boys are planning on cooking bbq and wings. I’m still trying to decide what else to prepare - which means spending some time on Pinterest. I might blog my finds tomorrow! What I'm Loving Wednesday

I thought I would link up again with This Kind Of Love's What I Love Wednesday.

I’m loving that I got to spend my morning volunteering at Greater Birmingham Ministries. This is a great organization that has a clothes closet and food pantry that they open up each week to 50 needy families in the area. They also provide for 250 families at Christmas. Currently, they are in desperate need of boys and girls clothing. If you live in the Birmingham area please consider cleaning out your kid’s closet and giving to this ministry!

I’m loving that I spent my lunch hour at a local consignment sale and bought 6 outfits for $26. There are several consignment sales happening all over the area the next couple of months and this is a great way for me to buy daycare clothes dirt cheap!

I’m loving that in a few weeks we will be making beach trips 2 weekends in a row!

I'm loving this yummy new recipe that I tried tonight- Plain Chicken's Taco Cornbread Bake. (I made mine minus the black beans)  I LOVE her recipes and we have really enjoyed the ones I have cooked so far!  I made her Pizza Puffs earlier this week and they were yummy too!

I'm loving these boots from Anthropologie.  I think I need them!


Last, but certainly not least, I'm loving this little one.

Couch to 5k and Other Happenings

My good friend Mallory and I started the couch to 5k program last Wednesday.  We have a gym at work and I'm not sure why in the three years I have worked there that I've never used it.  We are currently on week 2 day 2 and I'm so proud of us!  I'm amazed at how much more energy I have when I get home (as long as I don't sit down).  I have been coming home, cooking, cleaning and playing with Addi.  I'm sleeping SO much better as well.

Addi had speech therapy yesterday and I stayed for the visit.  Her therapist said that she is improving greatly and is now in the "imitation" stage.  She said so many different words yesterday like "pop" "bubbles" "uh-oh" and "danks" (thanks).  During our visit, Addi fell and busted her mouth.  She started bleeding, but I don't think she messed up her teeth...I was told to watch her teeth and make sure they don't turn gray.  As far as I can tell she just tore the thing that attaches the lip to the gum and the speech therapist said that would even help her speech.  Who knew?  I wish I didn't have to see that though - it broke my heart!

Yesterday, she also got on and off the riding toy by herself.  She's not much of a climber so we have been working on this for a while, but she has finally caught on! She's growing up too fast!

First Lake Trip

Janna is one of my very best friends.  We went to high school together, lived together at Auburn and still e-mail each other daily.  She has ALWAYS been there for me and for that I'm very grateful.  She made several trips from Huntsville to be with me when Addi was sick and when my dad passed away.  So she has definitely seen me at my worst. I miss her very much and wish she lived closer!  Her parents have a lake house and they invited us to come visit this past Saturday.



Addi wasn't so sure of the water at first, but she quickly got used to it and loved it!  Apparently swimming wore her out because during our boat ride she fell asleep.  When we got back we put her in Janna's dad's boat in the shade.  She slept like this for a good 45 minutes...
We had a great time and I'm so glad we were able to spend the day with good friends!
Today was spent going to church, having a small meltdown after church (it was passed lunch/nap time), taking a long afternoon nap and a quick trip to the grocery.  She is now tucked in and asleep and I'm about to enjoy Bride Wars and have some quiet time.  I hope everyone had a great weekend!

Little Miss Independent

This little girl has become little miss independent lately.  She wants to do EVERYTHING by herself.  This includes climbing the stairs, brushing her teeth and feeding herself...

 She had a small huge come-a-part when I attempted to feed her potato soup this afternoon. Every time I would come near her with the spoon, she would scream.  As soon as I gave in and gave it to her to do herself, she started eating! I let her feed herself pretty much everything, but I figured soup would be too big of a mess.   Her shirt was already a dirty from feeding herself lunch at daycare, so I just went ahead and left it on. She didn't make as big of a mess as I thought she would!  Needless to say, we had bath time immediately after dinner!

Feel the Burn

I'm so tired of being out of shape.  I'm tired of when Addi goes to bed, I end up sitting on the couch watching t.v.  I'm tired of having zero energy.  I'm tired of  my clothes not looking good on me or not fitting right.  I'm just plain tired.

Tonight, I decided to make a change.  After Addi went to bed, I went for what was suppose to be just a walk.  It ended up being a run.  Since I haven't worked out in forever, I probably should have started out slow.  However, it felt really good to workout again and hopefully I will keep it up!


I'm thinking I need a new pair of running shoes!! (hint hint Brad) :)

17 Months

My little munchkin is 17 months old today!  She has grown so much into a big girl and I just can't believe it.  She moved up to her new class this week and has done really well so far.

Physical therapy came yesterday and they said she did great and they won't need to see her again until October.  I'm currently looking for a mommy and me tumbling/gymnastics class in our area.  I think it would definitely help out with gross motor skill development. 

She is starting to talk more and more. Speech Therapy came again last week and worked with her.  She suggested that I get her ears re-checked since the last hearing screen she had was 6 months ago.  We will be going to the ENT next week for that.  She is actually starting to repeat words now as well.  Her favorite thing to say right now is "Oooohhh Weeee".  She says it all of the time!
She is growing up to be so independent and into everything.  She is also very stubborn and shows it when she doesn't get her way.  Our mornings have been very rough b/c like her momma, she's not a morning person at all.  She plays hard at "school" and is always so worn out when she gets home - 7:00 is her normal bed time and she's asleep in no time. (She goes to bed so early because I have to wake her up around 6:00)
She continues to eat just about anything and, for the most part, only wants to feed herself.  Grapes are still her favorite.  We had a momma and daughter afternoon yesterday and went to Chick-fil-a for ice cream and she couldn't get enough! haha.
She still fits into some of her 18 month clothing, but she mainly wears 24 months.  I had to go buy her some play clothes for "school" since they go on the play ground now.  I'm still trying to get together her clothes that she can't wear so I can sell them.  I had a teacher at daycare tell me that a mom in her class wants to buy Addi's clothes - well, I have a TON to sell! 
Last week, she developed an upper respiratory infection and she didn't feel good at all!  Since then, she has been so attached to her "teddy" and paci.  I thought I had weaned her from the paci (except for bedtime), but I made the mistake of giving it back to her when she didn't feel good last week. I need to slowly start taking it away from her again.

Here are a few more things about her that I want to remember at this age:
* She LOVES for us to read books to her.  Every night she will hand me a book and say "rea"
* I bought her a Cedarmont Kids CD and she dances in the car every time I turn it on.
* She loves going up and down the stairs - seriously, she could probably have fun doing that all day! haha

I love her more and more everyday and I cherish every second I get to spend with her!
